The creative geniuses behind the world-famous Gideon’s Bakehouse have just dropped a bombshell announcement: a brand-new restaurant concept called Six Ravens is officially coming to Disney Springs in 2026.
For years, fans have braved multi-hour virtual queues for those legendary half-pound cookies. Now, Gideon’s team is expanding their “fanciful and grim” empire with a savory twist that promises to be the next big viral sensation.
Forget what you know about standard pastry dough; these “Coffyns” are made with a signature fluffy yeast bread and stuffed with gourmet fillings. In a move that celebrates the Orlando food scene, owner Steve Lewis revealed that the fillings are being developed in collaboration with local culinary heavyweights.
More Than Just Pies

While the “Coffyns” are the stars, the menu will also feature:

Smashed Potato Fritters: Served with unique dipping sauces

Local Craft Beers: Partnerships with Sideward Brewing and The Ravenous Pig Brewing Co. are already confirmed.

A “Touch” of Sweet: While this isn’t a second cookie shop, there will be a limited selection of desserts to satisfy that Gideon’s sweet tooth.
The Lore and the Look

It wouldn’t be a Gideon’s project without a deep, mysterious backstory. Art Director Michael Reyes is leading the design, meaning we can expect more of that Victorian-Gothic aesthetic we love.
The name “Six Ravens” is inspired by the legendary ravens of the Tower of London, and the shop will feature a new character: a mysterious, cloaked woman who can transform into a raven. If you’ve been collecting the Gideon’s cards, you might recognize her from the “Six Ravens” card released back in November 2023!
Where and When?
Six Ravens will be located in The Landing, taking over the space formerly occupied by The Art of Shaving. This puts it just a few doors down from the original Gideon’s Bakehouse, making it the perfect one-two punch for your Disney Springs snack crawl.
Opening Date: Although an exact date hasn’t been set, Steve Lewis aims for an opening later this year.
